8 Strips Bacon, Diced in 1/2″ pieces
1 1/2 Sticks Butter
1 Cup Celery, Chopped Medium
1 1/4 Cup White Onion, Chopped Medium
1/2 Cup Red Bell Pepper, Chopped Medium
2 Cups Sweet Corn Kernels (Fresh)
1 1/2 Cups All Purpose Flour
5 Cups Strong Chicken Stock or Broth
3 Cups Half & Half
1/4 teaspoon Dry Thyme
2 Tablespoons Parsley Flakes
1/2 teaspoon Ground Black Pepper
To Taste Salt
2 Cups Red Skin Potatoes, Diced 1/2″
Step 1
Over medium heat, in a medium size sauce pot, sauté the bacon until crisp leaving the bacon grease in the pot.
Step 2
Add the butter and stir to melt.
Step 3
Add the onions, celery and the red bell pepper and saute until soft and tender. DO NOT BROWN.
Step 4
Add the flour and stir in. Continue to cook the mixture for 3 to 5 minutes while stirring, Do not allow the mixture to brown.
Step 5
Add the chicken stock and the half & half. Whisk in while bringing the mixture to a simmer.
Step 6
Add the corn, potatoes and seasonings.
Step 7
Reduce heat to a low simmer and stir until the potatoes are tender.
Step 8
Adjust seasonings and thickness as desired.
