For the Soup Base
8 RIPE, Roma Tomatoes, Chopped
1 medium Red Bell Pepper, Chopped
½ medium size English Cucumber, Peeled, Seeded and Chopped
1 cup Spanish Onion, Chopped
2 cloves Fresh Garlic
½ medium size Jalapeno Pepper, with Seeds
2 tablespoons Olive Oil
¾ cup Cold Water
3 tablespoons Cider Vinegar
1 tablespoon Kosher Salt
½ teaspoon Tabasco or Similar Hot Sauce
For the Garnish
5 RIPE, Roma Tomatoes, Seeded and Diced ¼”
½ medium size English Cucumber, Peeled, Seeded and Diced ¼”
¼ cup Green Onion, Sliced Thin on an Angle
½ cup Red Onion, Diced ¼”
½ cup Red Bell Pepper, Diced ¼”
1 ½ dozen large Cooked, Peeled and Deveined Shrimp
Step 1
Place all of the soup ingredients in a blender blend thoroughly and then strain.
Step 2
Finely chop 6 of the cooked shrimp and add to the strained soup as well as the garnishment of diced Roma tomatoes, cucumber, green onion, red onion and red bell pepper.
Step 3
Portion this garnished soup base into your chosen containers, bowls or glasses and additionally garnish with the remaining 12 cooked shrimp.
Step 4
NOTE: Additional garnishments to your finish dish can be: Chopped Italian parsley, crisp croutons or the traditional Spanish Gazpacho cheese of Manchego.
