8 piece Chicken Thighs (Seasoned with Salt & Black Pepper)
2 tablespoons Vegetable Oil
1 medium Onion (Cut Into Large Dice (1-inch squares)
2 medium Bell Peppers (Cut Into Large Dice (1-inch squares)
2 tablespoons Garlic , Minced
2 tablespoon Basil, Dried
1 tablespoon Oregano, Dry Crushed
1 cup Red Wine
2 cups Chicken Stock
1 can (28 oz) Whole Peeled Tomatoes, With Juices (San Marzano if Available)
1 can (15 oz) Tomato Sauce
1 can (6 oz) Tomato Paste
Step 1
Heat up Dutch Oven, add small amount of vegetable oil and sear chicken thighs until golden.
Step 2
Add cut vegetables and continue to sauté for 2 minutes.
Step 3
Add all remaining ingredients and stir to insure everything is well combined.
Step 4
Cover and place in 300 F. oven for 45-60 minutes. Check to unsure chicken has reached 165*.
Step 5
To serve place 2 pcs. chicken atop your favorite rice or pasta, then spoon vegetables and sauce to finish.

A Little Story About This Dish…
Chicken Cacciatore (loosely translated to: Hunter’s Style Chicken), is one of the classic “Old School” Italian countryside dishes.
This recipe uses chicken thighs which we love, because they are meaty, juicy and hold up particularly well in a casserole dish such as this one.
White wine can be substituted for red wine if that’s what you have on hand and you’ll want to be sure your stocks (broths), are very rich and flavorful.
This is a great cold weather comfort dish that is even more enjoyable the next day, so don’t be shy to double up the recipe. (Bone In chicken preferred).
