3  cups  All Purpose Flour
2 tsp  Baking Soda
2 tsp Baking Powder
1 ½  teaspoon  Ground Cinnamon
1 cup  Granulated Sugar
½ cup  Light Brown Sugar
½ teaspoon  Salt
2 tablespoons  Poppy Seeds
4Â Â Eggs
½ cup  Milk
1 cup  Vegetable Oil
2 teaspoons Vanilla Extract
1 ½ cup  Carrots, Grated
1 ½ cup  Zucchini, Grated
½  cup  Raisins
½  cup  Walnuts, Chopped
Step 1
Preheat your oven to 350 F.
Step 2
Prepare a non-stick, standard size loaf pan by spraying the inside surface with vegetable spray (Pam) then lightly dusting it with flour.
Step 3
Combine and mix together the flour, baking soda, cinnamon, sugars, salt and poppy seeds.
Step 4
Whisk together the eggs, milk, oil and vanilla and stir into the dry ingredients.
Step 5
Squeeze any excess juices or moisture from the carrots and zucchini and stir into the batter along with the raisins and walnuts.
Step 6
Turn the batter into the loaf pan and bake approximately 60 to 70 minutes depending on your loaf sizes.
Step 7
Remove the bread from the loaf pan once cool and store covered under refrigeration.
