3 cans Black Beans, Drained
2 tablespoon Canned Black Bean Juices
1 teaspoon Minor’s Chicken Base
1 tablespoon Brown Sugar
¾ teaspoon Liquid Hickory Smoke
1 tablespoon Vegetable Oil
1 tablespoon Garlic, Minced
¼ cup Carrots, Minced
2 tablespoons Green Onion, Minced
1 tablespoon Jalapeño, minced
½ cup Chopped White Onion
½ cup Chopped Red Bell Pepper
¼ cup Cilantro, chopped
1 tablespoon Ground Cumin
1 tablespoon Dark Chili Powder
¼ teaspoon Chipotle Powder
1 teaspoons Salt
2 cups Cattleman’s Rotisserie Chicken Meat, Diced 1/2”
To Fry:
Plain Bread Crumbs or Yellow Corn Meal to dust each side
Vegetable Oil
For Optional Garnishment:
Tomato Salsa of Choice
Sour Cream
Additional Cilantro
Corn Tortilla Chips
Step 1
Open the cans of black beans and before rinsing them, reserve 2 tablespoons of the black bean juices in a medium size mixing bowl.
Step 2
Add the chicken base, brown sugar, liquid smoke to the bean juices and whisk until all is dissolved.
Step 3
Strain off all the remaining juices from the 3 cans of black beans, rinse them in cold water and then allow all the water to strain off the beans.
Step 4
Add to the drained beans to the black bean juice mixture.
Step 5
Sauté carrots, garlic, onions and jalapeño in oil for 1 minute, or, until softened.
Step 6
Add the sautéed mixture to the bean mixture.
Step 7
Add the chopped cilantro, cumin, chili powder, chipotle powder and salt to the bowl.
Step 8
Mash this bean mixture together briefly leaving about half the black beans whole. The mixture should hold together. If it is too loose, mash a bit more.
Step 9
Add cooked rotisserie chicken meat and fold in.
Step 10
Portion into round cakes 3” in diameter and about 1” thick.
Step 11
Chill until firm (1 hour), then dust on both sides with plain bread crumbs or yellow corn meal.
Step 12
Pan-fry in vegetable oil on both sides until browned and heated through.
Step 13
Serve each cake topped with a tomato salsa of choice, a dollop of sour cream and additional chopped cilantro if desired
NOTE: These cakes are especially delicious if accompanied by corn tortilla chips.
