Smoked Kielbasa & Cabbage Soup

Ingredients

1/4 cup Olive Oil

1 medium Onion, Chopped

2 tablespoons Fresh Garlic, Chopped

1/2 cup Bell Peppers, Chopped (any colors)

2 cups Carrots, Chopped

1 head Green Cabbage, Chopped

3 medium Tomatoes, Seeded & Chopped

1 quart Chicken Stock or Broth (Strong)

1 quart Beef Stock or Broth (Strong)

1 tablespoon Kitchen Bouquet Liquid Seasoning

1/2 teaspoon Liquid Smoke (Hickory) Optional

2 sticks Smoked Kielbasa, Chopped

2 tablespoons Dry Parsley Flakes

1/2 tsp Oregano, Crushed

To Taste Salt & Pepper

1/2 tsp Basil, Dry

Step 1

In a large sauce pot over medium heat, add olive oil, then add, onions, garlic, peppers and carrots. Sauté for 5 minutes but do not brown.

Step 2

Add cabbage and cook, while stirring, to sweat down the cabbage. This will take about 5 to 10 minutes.

Step 3

Add all remaining ingredients and bring to a slow simmer.

Step 4

Simmer slowly for approximately 30 minutes to give a chance for all the ingredients to meld together and to fully soften.

Step 5

Adjust seasonings and amounts of liquids as desired.

A Little Story About This Dish…

A traditional Eastern European favorite, this hearty soup is full of cabbage and kielbasa. It’s a welcome meal on a frosty day and can even be used as a sauce when served with a pork roast or grilled pork chops.

Both the kielbasa and the vegetables in this recipe can be cut anywhere from shredded (which is what we prefer if used as a sauce garnishment), or as large as 1 inch pieces which gives you a whole different look.

This recipe can be adapted using alternate sausages such as Polish, Italian or German and freezes very well.
