1 stick Butter, Softened
1/4 cup Light Brown Sugar
3/4 cup Granulated Sugar
1 teaspoon Vanilla Extract
1 Extra Large Egg
3/4 cup All Purpose Flour
1 1/2 cups Quick Rolled Oats
1/2 teaspoon Baking Soda
1/2 teaspoon Ground Cinnamon
1/4 teaspoon Salt
1/2 cup Dark Raisins
1/2 cup Chopped Pecans
Step 1
Pre-heat your oven to 350F and have 2 non-stick cookie sheet pans available for the cookies
Step 2
In a mixing bowl with paddle attachment, beat together the softened butter with both sugars and the vanilla extract for 2 minutes on medium speed. Scrape down the bowl.
Step 3
Add the egg and continue to beat on medium speed for 2 minutes. Scrape down the bowl.
Step 4
Add flour, rolled oats, baking soda, cinnamon and salt and mix on low, then medium speed for 1 minute.
Step 5
Add raisins and pecans and mix on low to medium speed for 30 seconds to combine. Scrape bowl and make sure all ingredients are well mixed.
Step 6
Portion the cookies in approximately 2 tablespoon portions spaced approximately 3 inches apart from one another.
Step 7
Bake in the 350 F oven approximately 13 to 14 minutes, The cookies will spread to approximately 3 inches in diameter and be slightly brown around the edges. Remove the cookies from the oven and cool.
Step 8
Store cookies in an air tight container or zip lock bag.
