Fresh Broccoli and Bacon Salad

Ingredients

2 heads (6 cups) Broccoli Florets

1 ½ cups Cheddar Cheese, Shredded

¾ cup Red Onion, Cut in ¼” x 1” Slices

6 Strips Bacon, Cut in ½” Pieces

¾ cup Red Bell Pepper, Cut in 1/4″ x 1″ Pieces

1 cup Mayonnaise

2 tablespoons Cider Vinegar

1 tablespoon Granulated Sugar

1 tablespoon Dijon Mustard

1 teaspoon Prepared Horseradish (Optional)

To Taste Salt & Pepper6

Step 1

Sauté bacon until crisp, reserving the resulting grease.

Step 2

Mix together the mayonnaise, cider vinegar, Dijon mustard, 2 tablespoons of the bacon grease and the prepared horseradish.

Step 3

Place the broccoli, cheddar cheese, red onion, crisp bacon and the red bell pepper in large bowl.

Step 4

Add the mayonnaise dressing and toss to coat all the ingredients.

Step 5

Season with salt and pepper to taste.
