Fall Apple Recipes from The Culinary Institute of America

So many Cattleman customers enjoy baking their favorite apple recipes at home.

And Michigan Apple season is still in full swing!

We thought you might be interested to see a couple of the apple recipes being taught to budding bakers at one of the world’s most prestigious culinary schools, the Culinary Institute of America, located on the banks of the Hudson River in Hyde Park, New York.

Over the years the C.I.A. has produced some of the most award winning and recognized Chefs on the planet, including; Michael Mina, David Burke, Cat Cora, Michael Symon, Sara Moulton, Roy Yamaguchi, Todd English, Alfred Portale and the late Chef and Travel Author, Anthony Bourdain.

Myself, being a former student and fellowship instructor at this amazing institution, there is always something to be learned from their faculty of Master Chef’s, Bakers and Pastry Chefs, many of them having reached the pinnacle of their crafts.
