Nearly everyone loves chicken.

We enjoy chicken wings, chicken nuggets, fried chicken, stir-fried chicken, chicken soup, chicken salad, and chicken sandwiches. Just to name a few. However, one of the BEST ways to enjoy this delicious bird is also one of the best values in America, and especially at Cattleman’s. And that would be rotisserie-roasted chickens.

When we say, “one of the best ways”, we’re specifically focusing on one of the “healthiest” ways, as a rotisserie-roasted chicken is purely chicken, in all of its goodness. No breading, no deep-fat frying, no fillers, no additives.

A dinner of rotisserie chicken, some boiled or roasted potatoes, and a steamed vegetable medley is one of the most nutritious and economical meals you can serve your family.

But wait! There’s more!

Beyond the meat, the remaining bones and trimmings make an excellent soup broth once simmered in water. If strained and reduced even further, that broth becomes a rich, delicious sauce or jus.

Rotisserie chickens at Cattleman’s are so reasonably priced that we often recommend buying more than one. Simply strip the meat from the additional bird(s), dice it, and place it in a freezer bag to use in dozens of future recipes. Plus, more chicken bones mean more great broth, which you can also freeze for those aforementioned soups and sauces.

As part of our ongoing mission to share our favorite rotisserie chicken recipes, we’re kicking off this first edition with a few dishes we think you’ll really enjoy. They are simple, delicious, and incredibly versatile.

Our first few recipes share a theme ingredient: flour tortillas. A six-inch tortilla is standard for these, but any size you have on hand will work just fine. Two recipes on our website are perfect candidates for your rotisserie chicken; the links below will take you directly to them:

Our third recipe is an adaptation of a popular menu item you’ll often see at independent pizzerias and casual Italian restaurants. Our Barbecue Chicken Flatbread Pizza is a simple and convenient way to make a gourmet “pizza” without the hassle of making or stretching dough.

Ingredients for Cattleman's Meats' Barbecue Chicken Flat Bread Pizza

Ingredients:

  • 4 (8-inch) soft flour tortillas
  • ½ cup pizza sauce
  • ½ cup barbecue sauce (Sweet Baby Ray’s or your favorite)
  • 2 cups shredded mozzarella cheese
  • 2 cups diced, cooked rotisserie chicken
  • 1 cup red onion, cut into thin slivers
  • 1 cup bell pepper (red or green), cut into thin slivers
  • ½ cup fresh cilantro leaves, chopped

Preparation Instructions

  1. Preheat: Set your oven to 400°F.
  2. Prep the Base: Lay four 8-inch flour tortillas on a flat work surface.
  3. The Sauce: In a small bowl, stir together the pizza sauce and barbecue sauce. Divide the mixture into four equal portions. Spread each portion evenly over a tortilla, leaving a ½-inch unsauced border around the edges.
  4. The Cheese: Sprinkle the shredded mozzarella evenly over the sauce on each tortilla.
  5. The Toppings: Distribute the diced rotisserie chicken, slivered red onions, and bell peppers evenly across all four “pizzas.”
  6. Transfer: Carefully lift each topped tortilla with a spatula and place them onto a non-stick baking sheet.
  7. Bake: Bake at 400°F for 5 to 8 minutes, or until the cheese is bubbly and the edges of the tortillas are golden brown.
  8. Garnish & Serve: Remove from the oven and sprinkle each pizza with about 2 tablespoons of fresh chopped cilantro. Cut into four wedges and serve immediately.
