Beef Sirloin Chili

Ingredients

1 1⁄2 lbs. Ground Sirloin or Chuck

8 oz. Beef Sirloin Steak, Grilled and Cut into 1/2″ pieces

1 cup White Onions, Diced 1/2″

1 Tbsp. Garlic Cloves, Minced

2 Tbsp. Jalapeno Peppers, Fresh, Minced

1 -28 oz can. Canned, Diced Tomatoes, with its Juices

1 – 28 oz. can Tomato Puree or Tomato Sauce

3 tablespoons Ground Cumin

2 tablespoons Chili Powder

1/2 teaspoon Chipotle Powder

1/4 cup Red Wine

1 tablespoons Brown Sugar (heaping)

1⁄4 teaspoon Cayenne Pepper

1 cup Red Kidney Beans

As needed Water

To taste Salt and Pepper

Step 1

In a large pot over medium heat, saute onion, garlic and jalapeño pepper until softened. Do not brown.

Step 2

Add the ground sirloin and saute until the meat is well browned.

Step 3

Add all the remaining ingredients and reduce the heat to a low simmer. Simmer a minimum of 45 minutes to combine all of the flavors.

Step 4

During the simmering, adjust the thickness to your taste with water and also season with salt and pepper.

A Little Story About This Dish…

Chili, as most of us know it, began in the Southwest, United States and became most popular in Texas.

There is much debate, especially in Texas, on whether or not this dish (which they call a bowl of red), should contain beans. In the northern states, bean are usually contained in the recipe, and they are here.

The addition of Chipotle Powder gives this chili a faint hint of smoke which is particularly pleasing.

As far as the amount of heat, just add more or less cayenne pepper to the recipe or add your preferred hot sauce.

The most common topping garnishments are: shredded cheddar cheese, sour cream, green onions and diced tomato. It is also often served with corn bread or corn muffins.
