Tex-Mex Corn & Avocado Salad with Black Beans

Ingredients

2 ears Sweet Corn, Cut from the Cob

1 medium Avocado, Cut Into ½ Inch Pieces

1 cup Grape Tomatoes, Whole or Cut in Half

½ cup Red Onion, Diced

1 cup Black Beans, Canned, Rinsed and Drained

½ cup Cilantro, Chopped

1 clove Garlic, Minced

2 Limes, Juiced

3 tablespoons Extra Virgin Olive Oil

2 teaspoons Chili Powder

2 teaspoons Ground Cumin

1 teaspoon Granulated Sugar

To Tasted Salt & Pepper

To Garnish Italian Parsley and or Additional Cilantro

Step 1

Combine all ingredients and toss.

Step 2

Garnish with Italian Parsley or Cilantro.

Step 3

You can garnish this salad / salsa with corn tortilla chips as croutons or, as you would a salsa accompaniment.

A Little Story About This Dish…

This salad can be enjoyed both as an appetizer, or, as a main course and is a great choice for a light summer meal.

In fact, if you choose to chop the tomatoes smaller, it can be enjoyed as a salsa.

The corn kernels in this recipe can be stripped uncooked right from the cob, or char-grilled, or quickly boiled before removing from the cob. Your choice.

In addition, you can use both cilantro and Italian parsley in this recipe or, remove the Italian parsley if you prefer.
